AnnieMay's Lovely Lemon Curd



100g (4oz) butter
350g (12oz) granulated sugar
Rind and juice of 3 lemons
8 egg yolks or 4 whole eggs
This has a limited keeping time so is better made in small quantities - although we can eat quite a lot here!!
Place the butter, sugar, finely grated lemon rind and the strained lemon juice in a basin and place over a saucepan half-filled with simmering water. Stir until the butter has melted and the sugar has dissolved. Stir in the lightly mixed egg yolks. Continue to stir over the heat until the curd thickens. Remove from the heat and our into clean, warm jars. (Now enjoy cleaning the saucepan with some crusty bread!)
